Today we will be interviewing Mr. Sanada, who took on the challenge of cooking Italian food at the age of 58 and even went on to study abroad.

Q1 : How did you come to study in Italy?

After retiring from government working, I decided to pursue a career in cooking, which I had always loved, and at first I went to a sushi restaurant for training.

Then one day, I learned about Chef Sugihara, who has a restaurant in Siena, Italy.
He was fusing Italian and Japanese cuisine and offering Italian food with a Japanese feel.

I had always liked Italian food, but his influence made me interested in Italian cuisine. And although I was self-taught, I still felt I had limitations, so I decided to study in Italy, the home of Italian cuisine.

Q1 : イタリア留学の経緯を教えてください。

公務員を退職後、もともと好きだった料理の道に進むことを決めて、最初は寿司屋に修行に行きました。

そんなある日、イタリアのシエナでお店をされている杉原シェフの存在を知ったんです。
彼はイタリア料理と日本料理を融合させ、和を感じるイタリアンを提供していました。

もともとイタリアンは好きでしたが、彼の存在からイタリア料理に興味を持ちました。
そして独学で学んでいましたが、やはり限界を感じ、本場イタリアで学ぶことを決意したんです。

Q2 : Why did you choose Florence Culinary Institute?

Actually, I made inquiries to several schools, but Florence Culinary Institute was the most courteous.

They also provided me with good support in obtaining a visa, and I felt that I could trust this school.
A youthful student might be adventurous and just go for it, but I am older now, so I prefer to go to a place where I can feel safe and secure.

Q2 : フィレンツェ料理学園を選んだ理由をお聞かせください。

実はいろいろな学校に問い合わせをしたんですが、フィレンツェ料理学園が一番丁寧でした。

ビザ取得もしっかりサポートしてくれたし、ここなら信頼できるな、と。
若い子なら冒険的に「えいやっ」で行けちゃうかもしれませんが、やっぱり年齢を重ねている分、安心して任せられるところがいいですからね。

Q3 : What was the hardest part?

The language (Italian lessons) was tough!

I studied for about 10 months before going to Italy, but 10 months’ worth of knowledge was finished in 3 days (lol).

Q3 : 大変だったことは?

語学(イタリア語レッスン)は厳しかったですね!

イタリアに行く前に10か月くらい勉強してから行ったんですが、10か月分の知識は3日で終わってしまいました(笑)

Q4 : How were the lessons?

I was really inspired by the lead professor, Francesco.

Of course, the recipes were wonderful, but he said, “It’s my lesson, so I won’t follow the recipe. I’m going to arrange it in my own way.

I felt that was the meaning of learning from Him.

He was 59 years old, one year older than myself. I was also happy that he often invited me out for a drink, saying, “Let’s leave the younglings behind and go out for a drink.”

I was able to continue because he was really my teacher.

Q4 : レッスンはいかがでしたか?

主任教授のフランチェスコ先生から本当に刺激をうけました。

もちろん料理のレシピは素晴らしいものばかりでしたが、先生は「僕のレッスンなんだからレシピ通りには作らないよ。僕流にアレンジするからね」という姿勢。

「彼」から学ぶ意味がそこにあるな、と感じました。

ちなみに、先生は自分より1つ上の59才で「若い連中は置いておいて、飲みに行こう」とよく飲みに誘ってくれたのも嬉しかったですね。

本当に彼が先生だったから続けられました。

Q5 : That’s wonderful! Is there anything else that impressed you?

Actually, I had a tough time for about a week when I got gastroenteritis.
I even missed a lesson, and when I went there for the first time in two days, Francesco was concerned and took me to a café, “Toshi, are you okay?”

He ordered me a banana and a cup of tea.
Francesco said, “Just eat and drink slowly and come back later,” and was gone before I could answer…

Francesco’s kindness, his deep compassion as a person, everything made me so happy that a 58-year-old was crying in front of tea and bananas at the cafe (lol).

Francesco was really the best!
I am glad I met him.

And all the Italians I met were so kind to me.
I really love Italians.

Q5 : 素敵ですね!ほかに印象的だったことはありますか?

実は、胃腸炎になって1週間くらいきつい時期があったんです。
レッスンも休んで2日ぶりに行った時、フランチェスコ先生が「トシ、大丈夫か?」と心配してカフェに連れていかれたんです。

そこで「とにかく食べられるものを」と、バナナと紅茶をオーダーしてくれて。
先生は「ゆっくり食べて飲んでから戻ってくればいいから」と立ち去ったんですが…もう号泣でした!

フランチェスコ先生の優しさ、人としての懐の深さ、すべてが嬉しくて、カフェで紅茶とバナナを前に58才が号泣ですよ(笑)

いや、でも本当にフランチェスコ先生、最高でした!
彼に出会えてよかった。

それから、会うイタリア人イタリア人、みんな優しくて。。。
本当にイタリア人、大好きです。
